Easy home-made za'atar vinaigrette
Za'atar, lemon and olive oil — herby, nutty and faintly tangy. Three minutes for something that tastes like a trip.

If you cannot find za'atar, mix 2 tsp dried thyme, 1 tsp toasted sesame seeds and 1 tsp sumac and you are most of the way there.
Method

Stir the za'atar into the lemon juice and vinegar and leave for 5 minutes to soften.

Whisk in the honey, garlic, salt and pepper.

Stream in the olive oil, whisking, until it comes together.

Excellent on chopped salad, roast chicken, halloumi, or drizzled over warm flatbread.
