Whipped feta with honey & chilli

Hot honey works too. Serve with warm flatbread, always.
Method

Tip the feta, yoghurt, olive oil and lemon into a food processor. Blitz for a full 2 minutes, scraping down once, until completely smooth and mousse-like.

Spoon into a wide shallow bowl and use the back of the spoon to make a swooshing well in the centre.

Warm the honey in a small pan for 30 seconds — just enough to loosen it — and pour into the well.

Scatter with chilli flakes, thyme, a final drizzle of olive oil and a crack of black pepper.

Serve with hot, charred flatbreads for tearing and scooping. Eat immediately.
