Little wedge salad with sour cream dressing

Cold crisp iceberg wedges under a river of cool sour cream dressing, chives, cracked pepper. The salad I make when I want the vegetable to feel like a moment. Recipe by Molly Baz.

Little wedge salad with sour cream dressing

Ice the iceberg for 20 minutes before you dress it. It's the difference.

Method

    Sit the iceberg wedges in a bowl of ice water for 20 minutes. Lift out and pat completely dry.

    Whisk the sour cream, mayo, vinegar, mustard, garlic, chives, lemon zest, salt and a good grind of pepper into a pourable dressing. Taste for salt and lemon.

    Arrange the wedges on a cold plate. Spoon over the dressing generously so it puddles.

    Finish with more chives, extra black pepper and the blue cheese if using. Serve immediately.
