Strawberry gin
A whole punnet of strawberries and caster sugar steeped in a bottle of gin until the spirit turns the colour of the fruit — started today, poured three weeks from now.
3 weeks in the fridgeMakes about 1 litre

Ten minutes of work, then three weeks of leaving it alone. Stir it every two days, strain it when you are ready, and keep the jar in the fridge where you will not forget it.

Poured over ice — the colour is all strawberry, nothing added.
