Gabrielle's knockout hot chocolate
Why buy hot chocolate when you can make AMAZING hot chocolate at home? This mix is rich, silky, and completely knock-out.

The better the cocoa, the better the mug. Gabrielle knows her chocolate.
Method

In a small saucepan, whisk the cocoa powder, sugar, salt and about 3 tablespoons of the cold milk into a smooth, thick paste. This is the secret — no lumps.

Place the pan over medium-low heat and slowly whisk in the remaining milk. Heat gently, whisking often, until steaming and just beginning to simmer around the edges.

Remove from the heat and add the chopped dark chocolate and vanilla extract. Stir until the chocolate is completely melted and the mixture is glossy.

Taste and adjust — a touch more sugar if you like it sweeter, a little more salt if it needs depth.

Pour into a warm mug, top with whipped cream, marshmallows or shaved chocolate, and serve immediately with a biscuit on the side.
