The perfect welcome drink. Fizzy, bright, a little bit dangerous — you cannot serve one, only a jug.
Method
- 01
Chill a Champagne flute in the freezer for at least 10 minutes.

Shake the gin, lemon juice and sugar syrup hard with ice for 10 seconds — you want it properly cold.

Double-strain into the chilled flute.

Top slowly with Champagne, letting the bubbles settle so it doesn't overflow.
- 05
Twist the lemon peel over the surface to release the oils, then drop it in. Serve immediately, before the bubbles go.
