Durban chicken curry (with potato)
Hotter than anything you'll get in India. Potatoes tumbled in with the chicken — the tell-tale sign it's a Durban curry. Serve with rice, roti and sambal.

The potato is not optional. It is the whole point.
Method

Heat the oil in a heavy pot. Add cinnamon, cardamom and star anise, sizzle for 30 seconds.

Add onions and salt, cook 12 minutes until deeply golden.

Add garlic, ginger and cook 2 minutes. Add Durban masala, turmeric, cumin and tomato paste. Stir 1 minute.

Add grated tomatoes, cook until the oil separates — about 5 minutes.

Add chicken and turn to coat. Add stock. Simmer covered 30 minutes.

Add potatoes, cover and simmer another 25-30 minutes until the potatoes are yielding and the gravy is thick and glossy.

Taste for salt, finish with coriander. Serve with rice, roti and sambal.
