Crisp white wine, stone fruit, citrus and a whisper of brandy — the drink I pour the moment guests walk in, and the one they ask for again.

Classic white sangria — the signature drink

Always have a signature drink. Mine is white sangria — it's lighter and more elegant than the red version, and it goes with almost everything I cook in summer. Make it at least two hours ahead so the fruit perfumes the wine, and top with soda just before serving so it stays lively.

Method

    In a large glass pitcher, combine the brandy, elderflower cordial and orange juice. Stir until the cordial dissolves.

    Add all the sliced fruit and grapes, pressing gently to release a little juice. Pour over the white wine and stir once.

    Cover and chill for at least 2 hours — overnight is even better. The fruit will turn the wine pale gold and the wine will turn the fruit boozy and brilliant.

    Just before serving, tear in the mint, fill the pitcher with ice and top with soda water (or sparkling wine for a celebration). Pour into wine glasses and spoon a little fruit into each.
